The cooking plate exploits the direct contact and is suitable for limited thickness foods with relatively short cooking time such as meats, fish and vegetables.
In the market there are different types of plates, distinguishable in:
-Fry- top: The peculiarity of these devices is the temperature uniformity over the entire surface and the presence of the edges for the containment of liquids generated by wet cooking. Available in versions with smooth plate for maximum uniformity of cooking or ribbed in order to obtain the visual “grill” effect.
Uniformity of temperature: The fry-top OFFCAR ensure the homogeneity and constant maintenance of the temperature (adjustable from 100 ° to 300 ° C) throughout the cooking process. The stainless steel burners with stabilized flame (in the gas versions) and special tungsten resistors (in electrical versions) allow an immediate heat recovery even in the presence of frozen foods.
-Teppanyaki: ideal for show-cooking and for typically oriental recipes requiring at the same time a high working temperature and the possibility to keep food warm in the side parts of the plate, heated indirectly, without prolonging the cooking.
Possibility to choose of the cooking zones: to meet every need of use, in our range of teppanyaki plates it is possible to choose not only the size and the number of cooking zones (2 or 3), but also the power of the heating elements for a homogeneous cooking temperature all over the surface (adjustable from 100 ° to 300 ° C) or with lateral zones less hot.
Materials:
High performance is only possible by using the best construction materials. The OFFCAR plates are made only in carbon steel with possibility of chrome polished (with excellent characteristics of cleanability) or smooth finish. The high thickness of the plate (20 mm) increases the thermal inertia and helps to keep the temperature constant in time, optimizing the energy consumption.
The tray drawer:
The presence of tray drawer is important to collect residues, especially in case of cooking fatty foods. It must be of proper capacity (at least 2-3 liters for a medium-sized plate), easily removable and cleanable. In all Offcar models it is included and, on request, can be connected directly to the drain
